GUOTIE DUMPLING


since my daughter loves to order this gyoza or guo tie dumpling whenver we eat out.decided to learn
how to make google the recipes from internet.love it,never though it so easy to make.

GUOTIE DUMPLING
Integredients;
200g plain flour
1/2 tsp salt
110 ml hot boiling water
1 tbsp oil
method;
In a mixing bowl add in flour, salt and water ,mix well.use chopstick to stir slowly add hot water chop stick to stir to a crumble batter,then use hand to knead to a soft non stick dough,cover with damp cloth and rest for an hour.roll dough into long cylinder,cut into 24 pcs.take a pcs roll into a thin 11 cm round.place filling on the center wrapper,damper the side of the wrapper with water,pleat and seal.the side of wrapper.place a saucepan,greased with some oil.put in the dumpling fry until the bottom of the dumpling is brown,pour water until it comes half way of the dumpling.cover with lid and simmer increase the heat to a medium heat and cook until all the water has evaporated.serve with dipping.

Ingredients for filling.
300g minced meat
60g chives,minced
30g spring onion,minced
1 1/2 tsp ginger finely grated
pinch of msg or sugar
1 tsp sesame oil
2 tbsp soy sauce.
method;
mix all ingredients together till well mixed .taste for the saltiness to your perfer.

How to make dipping sauce.
1 tbsp light soy sauce
2 tsp minced garlic
2 tsp minced ginger
1tsp black vinegar
1 tbsp chilli oil
all ingredients mix well and serve with dumpling.

STEAMED COFFEE CAKE


surprise to know that cream cracker can  make into cake.when I saw the recipes,quite a easy one and
is a steamed one. get all ingredients ready to make this cake.nice cake less sweet.
 
STEAMED COFFEE CAKE
source; sypex kitchen

ingredients.
200g butter
70g castor sugar
5 egg yolk
50 g plain yogurt
250g cream cracker
1/2 tsp b.powder
1 packet 3 in 1 coffee ( use 20g )
4 egg white + 30g castor sugar
1/8 cream of tartar
 2 tbs milo or cocoa powder mix with 2 tbsp water to a paste
method.
1.cream cracker blend to a fine paste.
2.cream butter,sugar till light and fluffy.Add egg yolk one at a time.finally add in plain yogurt,add
in cream cracker powder,b.powder and coffee powder mix well,put aside.
3.in a clean mixing bowl whisk egg white,sugar,cream of tartar,whisk to a soft peak.fold egg white into the egg yolk ,fold all well combined.
4.divide batter into 3 portion take a portion,make a cocoa powder /milo.
5.line,greased the cake pan.pour in the light coffee batter,smooth the surface even,put to steam for 15
minutes,test with skewer to ensure it cook.pour the second layer,cocoa batter even smooth,put back
to steam for another 15 minutes, and last layer to steam till cook ,off heat.cool cake before cutting.
note; prepare steamer with water,bring to a boil before put the cake to steam

MUNG BEAN CAKE

Quite long I do not post anything on my blog.new beginging to star blogging.love this mung bean cake that make for last year mooncake festival.very easy and nice.

MUNG BEAN CAKE

Ingredients;
mung bean / lek tau suan bean 300g
butter 100g
sugar 150g
mooncake mould plastic ( small)

Method.
soak mung bean for 6-8 hour.drain,boil in water with lot of pandan leaves ,boil till the bean very soft,discard the leaves,drain dry.Blend the cook mung bean and sugar,butter to a smooth paste.
pour onto small pot using low heat,cook till the dough is thicken ,stir continously,do not burnt
the bottom.take out the dough on tabletop knead into a soft dough,ready to use.do it while still warm,
do it quick,roll into a ball and press into the mould and knock out.place on a container store it fridge.
straight away can consume.note.; can use any plastic mould you like.

SAMBAL TOMATOES

Love this sambal tomatoes,nice to eat with rice and other deep fry seafood to dip into.the sauce.

SAMBAL TOMATOES
Ingredients;
2 red chilli
7 red chilli padi
3 clove garlic
2 big red tomatoes
2 cm shrimp paste ( belacan)

Method.
cut all ingredients to smaller pieces or slice thinly.heat a saucepan with 2 tbsp oil,add in garlic,shallot,fry for a min,add shrimp paste ( belacan),red chilli,chilli padi fry for a minutes and lastly add in tomatoes fry till soft.off heat .put in blender to blend coarsely,ass salt and sugar for taste.adjust to your taste.

BAK KWA / PORK JERKY


pork jerky or bak kwa in chineses,is so welcome during the chinese new year.Almost every family will buy a pack or more.it quite expensive as well,I do tried making in the past recipes from internet,but the taste not right.gave up ,until I saw this blog,Miki 's food archives,decided to try again and i was happy with the result similarlity from outside stall sold.I use the chinese rose wine.

BAK KWA / PORK JERKY

Ingredients;
250g fresh minced pork with some fat
Seasoning;
50g sugar
7g light soy sauce
10g oyster sauce
1/3 tsp salt
23g honey
1 tsp fish sauce
1 tsp cooking wine /shaoxing ( i use rose wine)
a dash of white pepper powder.
Method.
1.in a bowl, mix together all seasoning.
2.add in minced meat,stir the mixture with a pair of chopstick in one direction(circular movement,clock wise ./anti clock wise) until mixture becomes sticky and gluey about 5 min.
3.cover with cling wrap,keep in fridgre and let marinade for 2 hour.
4.remove from the fridgre,preheat oven 160 degree( upper and lower heat ).use spoon ,spread the minced meat evenly over bakinf sheet (32x22 cm ).
5.bake in a preheated oven 160 degree for 20 minutes middle rack.
6.remove baking sheet from oven.reset temperature to max.240 degree grill mode.meanwhile slice the pork jerky or bak kwa with a pizza cutter,( I use knife).
7.when oven preheated,return the pork jerky to the oven,rack 4 above the middle rack grill for 3 minutes.
8.pull out the baking sheet from the oven.use a tong to flip over the porky jerky and continue to grill for 2 minutes.
9.reset the temperature to 200 degree,flip over the pork jerky one again and grill for 1 minutes.
For step 7-9,time maybe vary beacuse every oven are different.make sure watch closely on the baking progress,not to burn the pork jerky

COLD SOFT TOFU

Tofu my family favourite.Saw the recipe on the food blog,knew that is nice.My mom use to cook cold soft tofu for the family using chilli ,garlic and dark soy sauce only.I twist the recipes,soaked in hot water for 2 min,drain off the water. I used fresh soft tofu sold in the market.

COLD SOFT TOFU

Ingredients;
1 big pcs soft tofu
1 stalk spring onion,chop
some corriander leaves for garnish
some toasted sesame seed

Seasoning;
1 tbsp light soy sauce
1 tbsp sesame oil
1 tsp black vinegar
3 chilli padi,chop
2 garlic,minced
1 tsp ginger minced
1 stalk spring onion finely chop
2-3 corriander stem finely chop.
Method;
First cut tofu to smaller pcs,soaked in hot water for 2 min,drain off the water,put on a plate.mix all the seasoning in a small bowl,use spoon to stir well mix .pour on to the tofu and sprinkle corriander leves,chop spring onion and toasted sesame seed.serve.

THAI PANDAN WRAPPED CHICKEN


Popular thai dish.chicken wrapped with pandan leaves or screw pines leaves.just some wide pandan leaves,marinated chicken meat for the warpping.blanch the pandan leaves in hot boiling till soft,wipe dry easy ,soft for the wraping.there are many version on this recipes.after deep frying,the chicken is moist,tender infused slight pandan aroma.

THAI PANDAN WRAPPED CHICKEN

Ingredients;
4 chicken drumsticks,deboned ,cut into small pcs.
1 heap tbsp oyster sauce
1 tbsp light soy sauce
1/2 tbsp sugar
2 tbsp garlic paste
2 tbsp sesame oil
1 tbsp salt
3 tbsp rice wine
1 tbsp pepper
some pandan leaves 30 pcs,blanced in hot water till soft,drain

Method;
put all ingredients in a bowl,add the cube chicken mix throughly,cover and marinate in the fridgre for 6-7 hour..Some pandan leaves blanch in hot boiling water till soft,wipe dry ( choose the wide pandan leaves ).
wrap with pandan leaf and deep fry until cook.take a pandan leaves fold into pocket add tsp  and use your way to wrap ,secure it so when deep fried it won't came out.
